If you would have asked me what places were at the top of my travel list six months ago, Boulder definitely would not have been on that list. As a matter of fact, even when I booked my flight to Boulder, I wasn’t all that excited about the town itself. The one and only thing that pulled me there was that my best friend had just moved there, and I was visiting. Despite being there to visit my friend, I was left on my own frequently while she was at work, hence the second installment of “A Single Girl’s Guide” {read the first here}. Throughout the trip, I absolutely fell in love with Boulder.
I have never been more relaxed or stress free than I was in Boulder {even with my MacBook breaking the first day of the trip}.
Ever since leaving, I’ve just wanted to go back and be sitting on top of a mountain again. Prior to this trip, I had been to Breckenridge years ago to go snowboarding, but I never really saw why Colorado would be a destination during the summer. My mind was completely changed when I saw the beautiful scenery, trails, and rock climbing Boulder had to offer. Now I can’t decide if I’d rather be here hitting the slopes in the winter or climbing up them in the summer!
Le Pops
I’ll admit, I didn’t want to go to Le Pops. As a matter of fact, the only reason I went was because Hannah wouldn’t stop talking about how amazing it is before I got to Boulder. The whole concept of gourmet popsicles is in general lost on me. My idea of a popsicle is basically frozen ice in a plastic tube, rocket popsicles, or Outshine Bars.
{Le Pops doesn’t call them gourmet popsicles, rather ice lollies, but I can’t get gourmet popsicles out of my head.}
Le Pops‘ gourmet popsicles were missing from my life this whole time and I didn’t even realize it. They’re amazing. Unlike store-bought popsicles they don’t taste artificially sweet, instead, the flavors are pure and straightforward. Plus, you can get them chocolate dipped. At Dairy Queen my signature order has been a chocolate dipped cone since I was six, so having a chocolate dipped gourmet popsicle was like the grown up version. Or just the better version in general.
Go For a Hike
This was probably my favorite part of the whole trip. Hiking in Boulder is like a hiking/bouldering/rock climbing hybrid, and it’s beyond fun. My trail of choice is the Red Rocks Trail. Sitting on top of a mountain overlooking Colorado is so gorgeous and peaceful.
Eat Pizza Colorado Style
I’m familiar with New York style pizza {obviously}, and Chicago style pizza, but when Hannah called me freaking out about this crazy Colorado style pizza I had never been more confused. Let me break it down for you: Colorado style pizza is honey poured over thin crust pizza. It sounds, crazy, I know. Here’s the thing: it’s amazing. Like I’ve never loved eating cheese pizza more that amazing. I’m back in NYC now, but heaven knows I’m getting honey for my pizza here.
Spend a Day in Denver
Denver is actually relatively big when it comes to foodie-type places? I wouldn’t have expected it. Regardless, getting out of the mountains for the day to see what Denver has to offer {whether it be food or shopping or a museum} is the perfect day trip. Truthfully, I prefer Boulder to Denver, but Boulder is small and it’s nice to have a break.
Pearl Street
Pearl Street is like a slightly more free spirited and high end version of your favorite small town main street. Walk on Pearl Street away from the mountains and towards the outskirts of town to pop into a few vintage stores, or stick to the main Pearl Street Mall area for one of my favorite boutiques, Weekends {I was surprised to see some of my favorites such as Amanda Uprichard and Citizens of Humanity there}. Le Pops is also just off of Pearl Street, as well as Nani Nalu, a fun swimwear boutique.
Take a Mountain Drive
Going on a mountain drive through Boulder is not only gorgeous, but a great way to get away from everything. Driving into the mountains can get you to Boulder Falls, which is a beautiful waterfall area. Keep in mind that going deep into the mountains {such as Boulder Falls} typically results in the loss of cell signal. Be careful and trust your instincts!
